2 lbs Pork (or Beef)
2 Medium potatoes (or more or less depends how much you want)
1 large union
2 clove of garlic
2 lbs roasted and peeled long green chilies
Cube pork, chop union, garlic and sauté in pot with oil until brown. Chop onion and place in pot with a bite of oil to slightly cook. Cube pork to bite size pieces and place in pot to brown. Add diced garlic. Add red chili sauce to pot, enough to cover meat about 1 inch. Simmer for 1 1/2. Peel and cube potatoes to bite size pieces. Cover with medium heat until potatoes are done. Add salt to taste.
Serve with Spanish Rice, refried beans and flour tortillas.
