Ingredients:

2 lbs Pork (or Beef)
2 Medium potatoes (or more or less depends how much you want)
1 large union
2 clove of garlic
2 lbs roasted and peeled long green chilies

Directions:

Cube pork, chop union, garlic and sauté in pot with oil until brown. Chop onion and place in pot with some oil to slightly cook. Cube pork to bite size pieces and place in pot to brown. Add diced garlic. Peel and cube potatoes to bite size pieces, add to pot with enough water to cover food. Cover with medium heat until potatoes are almost cooked, add chopped chilies to pot. Cook until potatoes are done. Add salt to taste.

Serve with Spanish Rice, refried beans and flour tortillas.
