16 Long green chiles, roasted with stems and seeds removed
1 cup milk
1/3 cup flour
2 eggs
1/2 lb. Monterey Jack cheese
1/2 lb. Cheddar cheese
1 small onion chopped
1 small can tomato sauce


1. Spray 13 X 9 inch pan with nonstick spray
2. Mix Monterey Jack cheese and Cheddar cheese with onions
3. Layer chiles on bottom and add cheese mixture alternating until all ingredients are finished
4. Mix eggs, milk, and flour. Pour over chile mixture
5. Add the tomato sauce over the egg mixture
6. Bake at 350 degree oven for 1 hour or until golden brown
