1 Whole Chicken (Roasted or Boiled) 1/2 Medium Onion 2 Medium Tomatoes (Diced) 1 Garlic Clove Chopped 1 TBS Oregano 1 TBS Garlic Salt Course Ground with Parsley (or just Garlic Salt) 3 TBS Home Made Chili Salsa (Chili or Salsa from this site) 1-2 TBS Vegetable Oil
Directions:
De-bone and shred the chicken in a bowl and set aside. In a large skillet or pot add 1-2 table spoons of vegetable oil and set to medium heat. Add the onions and cook until sweating. Add the Oregano. Add diced tomatoes to the pot and saute for 1 minute. Add the chopped garlic to the pot and saute another minute or two. Add the shredded chicken to the pot and mix everything together. Add the Garlic salt and continue to saute for a minute or two. Add the 3 table spoons of your home made chili salsa and saute for another minute or two. Simmer at low heat for 2 to 3 minutes. Use this for burritos or tacos.
