4 Stalks of Celery 1/3 med onion chopped 3 Green Onions 6 Hard Boiled Eggs (One to one ration of egg to potato) 6 Potatoes Salt and Pepper to taste Mayo to taste (or until it sounds like brains when you stir) Dill Pickle (enough to your taste)
Directions:
Bring a large pot with water and some salt to a boil to cook potatoes. Peel and cube potatoes and place in boiling pot of water. Cook potatoes to a crisp but cooked. Put in a colander and cool down with cold water. I put them in the sink and run cold water through it while stirring. You want to stop the cooking process and get all the potatoes cold. Drain and place in a large bowl.
Hard boil eggs and cool down. Peel and slice. Put them in the potatoes. Chop the green onions, onions, and dill pickles and place with the potatoes. Add 1/3 - 1/2 cup of mayonnaise (or more or less to taste) and stir in to the potatoes. Add salt and pepper to taste. Place in refrigerator until you want to serve.
