Ingredients • 2 tablespoons extra-virgin olive oil • 1 tablespoon raw apple cider vinegar or rice vinegar • 1 teaspoon kosher salt • 3/4 teaspoon Dijon mustard • 3/4 teaspoon honey • 4 small-medium beets, thinly shaved • 1 (4-oz.) fennel bulb, trimmed and thinly shaved • 2 carrots, thinly shaved • 2 small or 1 large green apple, very thinly sliced • 2 teaspoons toasted sesame seeds • 1 tablespoon torn fennel fronds
Directions
1. Combine olive oil, vinegar, salt, mustard, and honey in a large bowl. Add beets, fennel, carrots, and apple; toss to coat. Sprinkle salad with sesame seeds.
