Ingredients:
2.5 - 3 LBs Beef Tongue 1 Yellow onion 2 Garlic Cloves 4 Bay Leaf 1 Jalapeno Olive Oil Beef Broth (Dry or liquid) 32oz Salt Pepper Garlic Powder
Directions:
Get a large pot and add half of the onion (course cut), garlic cloves, bay leaf, jalapeno (cut off stem so liquid can get in to the pepper), beef broth, 1 tbls salt, and 1/2 tbs pepper. Add water to pot enough to cover the tongue but not over spill. Bring to boil.
Clean off some of the surface fat from the tongue (to your liking). When the pot starts to boil, add tongue and cook for 30-40 mins.
Remove the tongue once time is up and allow to cool a bit. Keep the broth as you will use it in another step.
Get smoker prepped and get to 225 degrees. Add a water pan to smoker
Once the tongue is a bit cool to handle, peel or cut off the skin on the tongue. Next coat meat with olive oil and season tongue with salt, pepper, and garlic powder to your taste. Place it in the smoker and smoke for 2 hours spritz every 20 mins (broth, water, or apple juice).
Slice the other half of the onion in rings and place them in the bottom of a crock pot. Add some of the broth in the crock pot but not too much as the tongue will displace the liquid. You can add more after we place the tongue in it.
After the meat has smoked for 2 hours, place it in the crock pot with enough broth to where it just about covers it. Cook on high heat for 2 1/2 to 3 hours or until tender.
Once the meat is cooked, dice the meat for tacos and enjoy.
