10 roasted and peeled chiles 2 cups flour 5 eggs cheese of your choice (Muenster)
Get oil on pan hot, separate the egg white and yolks. Beat the egg whites until fluffy. Stuff chiles with cheese. In a plate place flour with salt and pepper to your taste. Add yolks to egg whites. Roll chiles in flour and dip chiles in egg mixture, place chiles in hot oil. Turn chile over. Place chiles when done on a plate (put paper towel on plate to dry oil) .
