1 whole chicken 1 Jar of Dona Maria Mole 2 TBLS Creamy Peanut Butter 3 TSP salt
Put chicken in a dutch oven pan (cut up chicken or whole chicken)fill with water (leave about two inches from the top) add 3 teaspoons of salt. Bring to a boil then lower heat and cover. Cook 45 minutes. Take chicken out of pan (save the chicken broth) and place on a cookie sheet so the chicken can cool. Once cooled you can start pulling the chicken from the bone and slightly shred it.
In another dutch oven pan put 4 cups of the chicken broth and add the whole jar of mole. On medium heat keep stirring until the mole is totally dissolved. Add the 2 Tablespoons of peanut butter and stir. If you mole is too thick add more of the chicken broth until you like the consistency. Add your shredded chicken and stir.
(Your choice) Sprinkle roasted sesame seeds) on top of the mole when serving it.
