1 Cup Jasmine Rice 1 1/2 Cups Chicken Broth 1/4 Cup Chopped Green Onions 2 Fresh Red Chilies, Seeded and Chopped 1 TBLS Chopped Cilantro 1 TBLS Margarine 1 TSP Minced Ginger Root 1/8 TSP Turmeric 2 TBLS Lime Juice 1/4 Cup Roasted Peanuts
In a medium sauce pan, combine Jasmine rice, chicken broth, green onions, chilies, cilantro, margarine, ginger root, and trumeric. Bring to a gentle boil. Cover. Reduce heat to simmer, and simmer for 15 minutes. Fold in lime juice and peanuts.
